SPINACH and PEARL COUS COUS SALAD

Ingredients

  1. salad
  2. 1/2 cuppearl cous cous, cooked
  3. 1/2red onion, thinly sliced
  4. 1bag of baby spinach leaves, washed
  5. 1/2bunch of basil
  6. olive oil
  7. salt and cracked pepper

Cooking Instructions

  1. 1

    In a large bowl, toss the salad ingredients together.

  2. 2

    Drizzle over some olive oil and season. Gently toss.

  3. 3

    Place in a serving dish. Serve immediately.

  4. 4

    Note: If you want to make it the day before then leave the olive oil until just before serving to stop salad from going soggy.
