Peel, clean, and wash the shrimp. Finely chop the ginger, crush the garlic, and mix them with the shrimp. Add salt, pepper, and dried chili to taste (optional). Marinate for at least 15 minutes.

Preheat a pan over medium-low heat with sesame oil and/or butter. Lightly cook the shrimp on each side as they will finish cooking later. Set aside.

Cut the bell peppers and onion into strips. Finely chop the ginger and garlic. Heat the pan with sesame and/or olive oil, add the onion, then the bell peppers, followed by the garlic and ginger. Add the curry powder and allow it to incorporate into all the vegetables. Finally, add the coconut cream. Mix thoroughly until all ingredients are combined and season with salt and pepper (taste the sauce to ensure it doesn't need more seasoning).

Add the precooked shrimp to finish cooking and allow the cream to evaporate a bit.

Place a bed of sushi rice, then serve the shrimp and vegetables on top. Add a bit of chopped parsley and enjoy.
