Saute the onions for 3-4 minutes over a medium low heat then add the spinach and garlic and saute again for another 3-4 minutes until spinach has wilted. Season with salt and pepper.

Transfer the spinach mixture onto a plate and place in a cold place like the fridge for a few minutes.

Next prepare the egg mixture, by whisking together the egg, cheese and herb of choice.

Remove any excess moisture from the spinach by squeezing it with your hands and then add it to the egg mixture.

Mix the egg mixture with the spinach and then divide into 4 equal parts and add each to 4 different halves of a tortilla and then fold the tortillas in half for large tortillas. For small tortilla 2 will be needed.

Spray the pan with fry lite then fry for 2-3 minutes on each half on low and serve with sour cream, plain yogurt or other creamy dairy sauce of choice.
