  3. 1 cupoil
  4. 2 cupsManchego cheese (or your preferred cheese)
  5. 2poblano peppers (roasted, cleaned, and seeded)
  6. 3serrano peppers
  7. 1 poundtomatillos (with husks)
  8. 2 clovesgarlic
  9. 1 pieceonion
  10. 1/2 cupcilantro
  11. 1 teaspoonsalt
  12. 1 pinchsugar
  13. 1 cupheavy cream

Cooking Instructions

1 hour
  1. 1

    Have all your ingredients ready.

  2. 2

In a saucepan, place the tomatillos and serrano peppers, and let them cook for 4 minutes.

  3. 3

Add the cooked tomatillos and peppers to the blender.

  4. 4

The poblano peppers should be roasted and cleaned before adding them to the blender.

  5. 5

Add the half cup of cilantro (cleaned and chopped).

  6. 6

Then add the piece of onion and the two cloves of garlic.

  7. 7

Add the teaspoon of salt and the pinch of sugar.

  8. 8

Blend these initial ingredients. If you don't like the mixture too thick, add a little chicken broth or water.

  9. 9

After blending the initial ingredients, add the cream and continue blending.

  10. 10

Once the mixture is ready, add a little oil to a pan to fry the tortillas (just a quick pass).

  11. 11

Once the tortillas are ready, add the shredded chicken and place them in a baking dish.

  12. 12

With the tortillas in the baking dish, add the mixture and your cheese. Note: Save a little of your mixture to add to your plate with your enchiladas at the end.

  13. 13

Place the baking dish in the oven for 15 minutes, until the cheese is melted.

  14. 14

Done! Add a little of the reserved mixture to your plate and place your enchiladas. Enjoy a delicious dish! 😋
