Ingredients

6-8 people
  • 2 lb.ground beef
  • 1onion, minced
  • 1red bell pepper, minced
  • 4-5large cloves garlic, minced
  • 2 T.minced jalapeño, or to taste
  • 1 tsp.ginger powder
  • 2 tsp.thyme
  • 1 T.allspice
  • 1 tsp.cinnamon
  • 1/2 tsp.nutmeg
  • 1 T.brown sugar
  • 1orange, juice & zest
  • 1lime, juice & zest
  • 2 T.soy sauce
  • 1 T.Worcestershire sauce
  • 2 cupsbeef broth
  • 28 oz.can diced tomatoes
  • 2 canskidney beans, rinsed & drained
  • Salt and pepper to taste
  • Optional Garnishes:
  • Shredded extra sharp cheddar cheese
  • Sour cream
  • Green onions
  • Coconut rice (Jasmine rice cooked in coconut milk, not water)
  • Lime wedges
  • Fresh pineapple, diced

    I like to mise en place my ingredients before I begin cooking; makes it easier, and less likely I'll forget something. Took me about 40 minutes to prep. I mince the onion, bell pepper and jalapeño (jarred) very small for better distribution in the chili. And because my sister and I don't care for the texture of tomatoes, I puree them with an immersion blender before adding.

    In large soup pot over medium-high heat, cook the hamburger and onion, breaking up the hamburger. When meat is no longer pink, stir in the bell pepper, garlic, and jalapeño. Let cook 5 minutes.

    Stir in remaining ingredients, mixing well. After 10 minutes, reduce heat to medium low. Simmer, uncovered, stirring occasionally, for about 30 minutes.

    Serve hot with desired garnishes.

My 5 siblings and I were raised in the 1950s and 60s midwest by a major foodie dad who was a great cook. We all learned to cook at a young age. I love to cook for my 2 daughters, 7 grandkids, 10 great-grandkids, and extended family. My 4 year old great-grandson makes my day when he says "Nan sure is a good cooker!". :-). I'm trying to get all my favorite recipes saved here so my family and friends all have easy access to them even after I'm gone. My Cookpad collection is their inheritance, so I try to add my comments and memories to each recipe; that way they'll remember me with a smile when they use the recipes years from now. Recently I've called on my grandkids (all adults and avid cooks) to send me their own favorite recipes, with their prep photos, so we can collect everyone's favorites together in one place.
