Excellent recipe for a super light and delicious Mexican-style dinner.

Finely chop the vegetables and sauté them in a little olive oil.

When the vegetables are soft, add the tuna and cook for a couple of minutes. Then add the tomatoes and cook for a couple more minutes. Add the beans and corn and mix everything together.

For the sour cream, place the cream cheese in a bowl, add the juice of half a lime and a pinch of salt, and mix well. Set aside.

Add the shredded cheese to the filling and let it melt. Meanwhile, warm the tortillas, add the filling, top with chopped cilantro and more cheese, and roll them up. Spoon a little sour cream sauce on top. Serve with salad and avocado if desired.
