Add some bamboo shoots for their crunchy texture, and drain off the fat that comes out of the meat to make this dish healthy.

If you don't want to bother making the meat sauce, just use canned meat sauce and add some herbs, spices and a can of tomato and cook it down.
As for the seasoning, as long as you taste as you adjust, it will turn out pretty well even if you don't measure properly - that's the good thing about taco rice. Recipe by pegupepepe

Ingredients

3 servings
  1. Meat sauce
  2. 200 gramsGround beef
  3. 1large, chopped Onion
  4. 1/2diced and blanched Cooked bamboo shoot in water
  5. 1can. smush the tomatoes up will with your little hands. Canned tomatoes
  6. 1Garlic
  7. 1Whatever herbs and spices you have on hand
  8. 1Bay leaf
  9. 1 dashSake or wine
  10. 1 dashbit of each Ketchup, Japanese style Worcestershire sauce, soy sauce, sugar, salt, pepper
  11. Salsa
  12. 1as much (to taste), chop finely Tomatoes
  13. 1as much (to taste), chop finely and put in a bowl of water Onion
  14. 1swirl Olive oil
  15. 1 dashof each Lemon juice and parsley (optional)
  16. 1 dashof each Salt and pepper
  17. 1Tabasco sauce
  18. Vegetables of your choice
  19. 1as much (to taste). roughly julienne. Lettuce, celery
  20. Toppings
  21. 1as much (to taste) Pizza cheese or cheese

Cooking Instructions

    Let's make the meat sauce.

    Stir fry the ground beef without oil. Drain off any rendered fat. Season with salt and coarsely ground black pepper, add the onion, bamboo shoot and a little sake, and stir fry.

    Add whatever herbs and spices you have on hand, and as much as you like.

    You can add red chili powder, oregano, paprika, nutmeg, black pepper, but the chili powder is a must.

    Add a can of crushed tomatoes (juice and all) and one bay leaf.

    Flavor with ketchup, Worcestershire sauce, soy sauce, sugar, salt and pepper. Adjust the quantity to your preference as you taste.

    Even if you don't measure the ingredients, just taste as it cooks. When there's no liquid left in the pan, it's done.

    Prepare the salsa. Combine the salsa ingredients, adjust the seasoning with salt and pepper, and it's done. Add Tabasco to taste.

    Serve rice in a bowl, top with lots of vegetables, salsa, a generous portion of the meat sauce, cheese, and parsley.

    Finished!! Add more Tabasco to taste.
