Ingredients

Serves 1 serving
  1. 3 1/2 ozspaghetti (100 grams)
  2. 1 ozgrated Pecorino Romano cheese (25 grams)
  3. 1 ozgrated Parmigiano Reggiano cheese, aged 30 months (25 grams)
  4. Salt and freshly ground black pepper, to taste

Cooking Instructions

    Bring a large pot of salted water to a boil and add the spaghetti.

    In a bowl, combine the grated cheeses and plenty of freshly ground black pepper. Add about one ladleful of pasta cooking water and mix until you get a creamy sauce.

    Once the pasta is cooked, drain it and add it to the bowl. Toss well to coat with the cheese sauce. Add a little more freshly ground black pepper and serve.
