Even though it's simple, you can make sweet and spicy pork liver that's fluffy, delicious, and rich in iron without any unpleasant smell. Consuming it with oil increases absorption.
The origin of this recipe
I created this recipe to make it easy to prepare iron-rich pork liver at home for health management.
Pregnant women in the early stages should be cautious about consumption. (Due to high vitamin A content, avoid excessive intake during early pregnancy.)

  1. About 250g pork liver
  2. 1 tablespoonwhite sesame seeds (coarsely ground)
  3. 1little more than 1 tablespoon sesame oil (for frying)
  4. [Seasoning] *Mix in advance
  5. 1/8 cup (25 ml)●soy sauce
  6. 1/8 cup (25 ml)●cooking sake
  7. 1/8 cup (25 ml)●mirin
  8. 1little more than 2 teaspoons ●sugar
  9. ↓ For preparation ↓
  10. 1/2-3/4 cup(100-200ml) milk
  11. About 2 tablespoons cooking sake

Cooking Instructions

  1. 1

Place the liver in a strainer, rinse lightly with water, then soak it in a bowl of milk for about 10 minutes. (This removes the odor.)

  2. 2

Remove the liver from the milk, place it in a strainer, rinse lightly with water, sprinkle with sake, and lay it on paper towels to remove moisture.

  3. 3

Heat a frying pan and add sesame oil.

  4. 4

Arrange the liver pieces in the pan without overlapping and cook over medium heat. (About 1-2 minutes per side) *Cook the liver briefly to avoid it becoming tough.

  5. 5

Once browned, flip the liver and cook the other side over medium heat until browned. (It's done if no blood comes out when pierced with chopsticks.)

  6. 6

Add the ● seasonings to the pan and simmer over medium heat until the liver is coated.

  7. 7

When there's a little liquid left, add the sesame seeds, mix, and turn off the heat. (The sauce should be sufficiently reduced by this point.)

  8. 8

Serve on a plate and it's ready.
Sprinkle sesame seeds on top for a nice presentation. Enjoy!

  10. 10

When cooking the liver, use medium-high heat and brown each side for about 1 minute. Ensure it's cooked through when mixing with the sauce.

  11. 11

If there's too much sauce left, the heat might be too low.

  12. 12
