Ingredients

Serves 4 servings
  1. Use any vegetables you have on hand
  2. 1/4daikon radish
  3. 1/2carrot
  4. 1/2small onion
  5. 2small potatoes
  6. 2-3cabbage leaves
  7. 3 3/4 cupswater (900ml)
  8. about 2 1/2 teaspoons granulated consommé (cubes are okay)
  9. about 1/2 inch ginger paste (optional)
  10. salt to taste
  11. 1 pinchpepper
  12. 1 pinchdried parsley (for topping)
  13. Beaten eggs or tomatoes also pair well

Cooking Instructions

    Chop the vegetables for the soup. *Cut them as you like. Daikon radish and carrots should be smaller and thinner for easier softening and digestion.

    Add water and vegetables to a pot and bring to a boil over medium heat. Skim off any foam that appears with a ladle.

    Add granulated consommé and ginger paste, and simmer until the vegetables are soft. *Pay special attention to the daikon radish and carrots!

    Season with salt and pepper. *Use very little pepper to be gentle on the stomach (it's okay to skip it!). If adding beaten eggs, do so now.

    Serve in cups and sprinkle with parsley if desired.
