Clean the chicken and place it in a pressure cooker. Add water and wait until you can skim off the foam. Then add salt, bay leaves, cardamom pods, cinnamon sticks, cloves, a quarter piece of ginger, and an onion. Close the pressure cooker.

In another pot, add vegetable oil, cashews, pine nuts, and sliced almonds. Fry them until golden brown, then set them aside, leaving the oil in the pot.

Add the onion, finely chopped or to taste, and fry until golden brown.

Add the ground meat and fry with the onion. Then add the spices (2 tablespoons ouzi spice, 1/4 teaspoon black pepper, a pinch of cinnamon, a pinch of seven spice, and salt) and fry until cooked through.

Once the chicken is cooked, open the pressure cooker after cooling it down. Remove 6 cups of chicken broth, strain it well, and add it to the fried ground meat. Let the broth boil with the meat.

Wash 3 cups of basmati rice. Note: Use the same cup to measure the broth and the rice. Wash the rice well and add it to the ground meat and broth. Add salt to taste, close the pot, and cook until the rice is done. Once the rice is cooked, add 2 tablespoons of ghee, stir slightly, and turn off the heat.

After the rice is cooked, place it on a large platter, preferably stainless steel. Then add the chicken after removing the bones, and top with the nuts and a pinch of cinnamon.
