Some seafoods are no longer available or affordable because of overfishing, like shark fin, whale meat and abalone. Sea farming is filling this void, but an abalone steak now costs $10 per ounce, $80 for a large steak.

The other solution is imitation. Mock shark fin soup has replaced real sharkfin, seitan has replaced whale meat, and now, I just learned to make silken egg tofu that reminds me very much of the consistency, texture and look of mild white abalone steaks. For seafood flavor, I tested adding anchovy paste and dashi. I prefer anchovy.

The recipe to cook mock abalone or real abalone is as simple as pan frying a steak. The abalone is dipped in flour and seasalt and sauteed in olive oil and butter till golden.

Ingredients

Make tofu, 30 min, sautee abalone, 10 minutes
2 people, 2 steaks
  1. Make 2 large silken egg tofu abalone steaks and 2 small test steaks:
  2. 4-6medium size fresh farm eggs in dough mixer with whisk attachment
  3. 12 ouncessoy milk in dough mixer with whisk attachment

  4. 2 teaspoonsanchovy paste
  5. 2 Tspdashi
  6. 2 Tspflaked seasalt
  7. For the sautee:
  8. 2 Tbsall purpose flour
  9. 2 Tbscashew butter
    California Farm Fresh Pasteurized Cashew Milk and Butter
  10. 2 Tbsolive oil
  11. For the lemon butter gravy:
  12. Pan drippings
  13. 1 Tbscashew butter
  14. 1 Tbsflour
  15. 4 Tbslemon juice
  16. 1 Tspcorn starch in Tbs water
  17. Serve with summer salad and scalopped truffle potatoes Anna

  19. Equipment: large wok with lid, steamer, mixer with whisk attachment, ziplock freezer bag, thermometer, plate for flouring, cast iron skillet to sautee
  20. Cost: soy milk, $1, eggs farm free or $1.60, other 40 cents, per steak $1.50

Steps

Make tofu, 30 min, sautee abalone, 10 minutes
  1. 1

    First, put scalloped truffle potatoes in oven, they will take an hour. See recipe in here. Then make summer salad, set aside. Then make mock abalone. Beat eggs and anchovy paste and dashi. Add soy milk and whisk to a smooth emulsion.

    To make a test batch: put 1 1/4” of silken egg tofu in a small jar, about 1 ounce. Put in boiling water in a large wok, loose lid on top to prevent skin from forming, lid on wok, steam 20 minutes, cool. Dip miniature steak in flour, sautee in skillet, taste. Add more anchovy or dashi to your preference.

    Steam the silken egg tofu: Fill quart ziplock freezer bag with 16 ounces of silken egg tofu batter. Make sure all air is expelled, let foam remain. Lay flat on steamer in large wok with steaming water. After five minutes, open bag to release any left over air. Put lid on wok, steam 20 minutes total. Cool till firm, remove ziplock bag.

    Cut on the diagonal into two abalone steaks, eight ounces each, 1 1/4” thick. Dust steaks in all purpose flour and flaked seasalt.

    Heat olive oil in cast iron omelette skillet, add butter, when foaming, place floured abalone steak in skillet, sautee 6 minutes for 1 1/4” thick, each side

    To make lemon butter gravy, brown cashew butter till you smell the nutty flavor in the olive oil pan drippings, add the lemon juice, flour, corn starch, stir, heat till thick, serve on the side or on potatoes and abalone.

    Serve with truffled scalloped potatoes, wedge of mozambi lime, garnish of parsley.
