I have followed the recipe of @dollopsbydipa - Deepa Rupani.
Crispy Corn is a delicious and crunchy starter which is served in the most of the restaurants. It's made of sweet corn kernels which are deep fried and seasoned with spices and herbs. It tastes so yummy that you demand frequently. I have just to flavoured with some spices to enjoy sweet corn's original taste otherwise you can saute it with sauces too. It's easy and simple to cook if follow certain tips.

Ingredients

30 minutes
2 serving
  1. 2 cupsweet corn kernels
  2. 1 tbspcorn flour
  3. 1 tbspall-purpose flour
  4. 1 tspblack pepper powder
  5. 1 tbspred chilli powder
  6. 1 tbspchaat masala
  7. 1 tbspfinely chopped coriander
  8. 1 tspfinely chopped green chilli
  9. 1lemon
  10. 1 tspsalt
  11. 1/2 tspsugar
  12. 1 cupoil for deep fry

Cooking Instructions

    Put 2 cups of water in a big vessel to boil. Add salt and sugar and add corn kernels in it. After 4-5 minutes you will find that they are floating so it's a sign to remove in a strainer as it's done.

    Add both the flours, black pepper powder and salt into the boiled corn and toss it well so each corn kernels is coated with flour properly. Then transfer them to strainer and strain the extra flour.

    Heat the oil and deep fry them until they turn crispy on medium to high flame, then transfer it in a plate.

    After 4-5 minutes, again deep fry them on high flame to make it crispier. You can see it's golden colour and can feel it's crunchy sound while transferring in a plate.

    Now immediately season with dry spices, green chilli, coriander and lemon juice and mix well. Serve it hot and enjoy!!!
