Gather all ingredients and create mise en place. Dice onions, thinly slice green onion, and kimchi.

Heat up wok with oil of choice and sauté onion until fragrant and slightly translucent on medium heat..

Add in leftover rice, protein (optional), gochujang, kimchi, and kimchi juice. Mix to combine on medium-high heat.

In a separate pan, fry egg to your desired doneness.

Plate fried rice with a side of kimchi, top with egg and optional garnishes. Enjoy!
