Wash and slice each tomato into four pieces. Remove seeds, collecting the juice separately.

Heat a pan with 1 tablespoon olive oil. Add shallots, garlic, curry leaves, green chilies, and dry red chilies. Sauté for 2 minutes.

Add the sliced tomatoes, salt, tamarind paste, and the reserved tomato juice. Cook until soft and mushy.

Let the mixture cool completely.

Transfer it to a blender, add cumin seeds, and blend to a smooth consistency.

For tempering, heat 2 tablespoons olive oil in a pan. Add mustard seeds and allow them to splutter. Add curry leaves.

Add the blended chutney and cook on medium flame until the moisture evaporates and the chutney thickens.
