Green Amaranth Leaves Curry | Thotakura

Wash Amaranth Leaves throughly. Then, chop the leaves and keep aside.

Take all ingredients together to make Amaranth leaves curry. Heat oil in a kadhai. Add Mustard seeds and fenugreek seeds. saute until they turn golden. Then add urad dal, cumin seeds, roasted chana and dried red chillies. Then add curry leaves and let it splutter.

Add amaranthus leaves, turmeric powder, green chillies and ginger garlic paste. Mix well and saute for a minute. Then add water or salt. Cover and cook for 5 to 7 minutes on medium heat.

Add whisked curd in cooked amaranthus leaves.

Mix it well, cook for a minute and it is ready. Serve with steamed rice or chapati.
