Steps

Prepare paratha dough. Cover and keep aside. Combine all the ingredients for stuffing in a plate.

Roll slightly bigger puris from the dough. Ensure to make them in pairs. Place 1 puri in a small bowl. Fill the stuffing inside it.

Cover it with another puri and gently press. Turn the bowl upside down and gently rub in order to cut extra sides of th puris. You'll have a pocket ready. Fasten the sides of the pocket in order to secure the sides.

You can also press the sides with a fork for a design. Prepare all the pockets similarly. Heat up oil in a pan. Place the pockets on it. Saute them over low to medium heat.

Ensure to gently press them or move around to dip them better in the oil, so the sides also get cooked well (check the video). Cook them well on both the sides and all around.

Crispy yummy pockets are ready! Serve hot with your favourite sauces.

Variation: 1. you can make stuffed parathas instead of pockets. 2. You can add spring onions, green garlic etc to best suit your taste and availability. 3. The pocket can be served in parties, dip-fry them in that case.
