Wash the Karele. Peel and slit, deseed, set aside

In a plate add turmeric powder and salt and smear the Karele and coat the spices well inside and outside and set aside for 30 mins

In a pan add grated coconut and on flame roast for 5 mins, set aside to cool completely
- 4
In the same pan add whole red chillies, whole coriander seeds, cumin seeds, 5-6 garlic cloves, salt and jaggery and roast for 5 mins, set aside

Add altogether into the blender and blend into spice

Press the Karele to extract turmeric water and in a pan heat coconut oil and add the Karele, fry on medium flame and set aside to cool

Add the stuffing into the fried Karele and plate. Enjoy with Dosa or Idli or steamed rice
