Whipped up a chicken curry sauce today and OMG,my kitchen turned into a mini restaurant! The flavors were popping, the aroma was giving chef’s kiss, and the sauce? Smooth, spicy, and dangerously addictive.

Marinate chicken with curry, turmeric, ginger, garlic, coriander, mixed spice, rosemary, thyme, and salt for 10 mins.

Sauté onion, tomatoes, bell peppers, and carrot in oil until soft.

Add marinated chicken and bay leaf, cook until chicken is browned.

Pour in coconut milk, simmer for 10 mins.

Mix corn starch with a little water, stir into sauce to thicken.

Add soy sauce, stir well, adjust seasoning, simmer 2 more mins.

Serve hot with rice or anything of choice
Tips
Marinate the chicken for enhanced flavor and sauté the vegetables for a richer taste.
