Ingredients

  1. Salad
  2. 375 gramsdry wild rice
  3. 2 can(400g each) mixed beans, drained & rinsed - I used a mix of cannellini, flageolet and adzuki beans but any are fine
  4. 1 can(340g) sweetcorn, drained
  5. 1red onion, peeled & finely sliced
  6. 2red bell peppers, deseeded & finely sliced
  7. Dressing
  8. 1grated zest and juice of 1 lime
  9. 2 tspagave nectar / honey
  10. 1red chilli, deseeded & finely chopped

  1. 1

    Cook the rice according to the packet instructions, then drain and rinse cold - I used Lundberg Wild Blend brand rice - it contains a mixture of long grain brown rice, sweet brown rice, wild rice, whole grain red rice and black rice

    Put in a bowl with the mixed beans, sweetcorn, onion and bell peppers

    Mix the dressing ingredients together

    Toss with the other ingredients and add salt or other seasonings to taste

  5. 5

    This is a great side for picnics, potlucks, pizza, chicken, fish, goes with pretty much anything. You don't need to dress with the dressing I listed, you can use mayo or any other salad dressing you love

    This amount will serve 10 - 12 people
