Easy Stovetop Granola

I love granola, but sometimes it can be tedious and time consuming to make. And oftentimes, I'm the main one in the house eating it, so I don't like to make up huge batches. I came across this recipe that not only makes a smaller batch, it's also done in 10 minutes without turning on the oven. It's fully customizable, so use whatever ingredients you'd like. The combination pictured above is walnuts, pecans, almonds, pumpkin seeds, dried cranberries and golden raisins. Recipe adapted from Clean & Delicious @ YouTube.

Ingredients

  1. 1 tbsp.coconut oil
  2. 2 cupsold fashioned rolled oats
  3. 3/4 cupnuts of choice (walnuts, almonds, pecans, etc.)
  4. 2 tbsp.seeds of choice (pumpkin, sunflower, etc.)
  5. 3 tbsp.pure maple syrup
  6. 1 tsp.ground cinnamon
  7. Pinchsalt
  8. 1/4 cupchopped dried fruit of choice (optional)
  9. 1/4 cupshredded coconut (optional)
  10. 1/4 cupdark chocolate chips (optional)

Cooking Instructions

    In a large skillet, heat the coconut oil over medium heat.

    Once the coconut oil has melted, add the oats, nuts, seeds, cinnamon, salt and maple syrup. Stir to thoroughly combine everything.

    Cook for 5-10 minutes, stirring nearly constantly to prevent anything from burning, until everything is toasted and golden.

    Remove from the heat and allow the granola to cool completely.

    Once it's cool, you can mix in any other add ins you'd like (dried fruit, shredded coconut, chocolate chips, whatever you'd like).

    Store in an airtight container for up to 2 weeks.

I love to bake and to try out new recipes! I'm always on the lookout for simple dinners for busy weeknights. A lot of the recipes I post on here are ones I've found on Pinterest or from different bloggers, and that I've tried and really enjoyed, but I always reference to where I got the recipe from in the recipe description and the pictures are my own. If there's no source listed, then it's a rare recipe that I came up with. I have two wonderful kids and I hope to pass on my love of cooking and baking to them.
