Ingredients

8 servings
  1. 450 gramsblack beans (1 can), rinsed and drained
  2. 1garlic clove
  3. 2 tbsptahini
  4. 2 tbspolive oil
  5. 1 tspchili sauce (Sriracha if possible)
  6. 1large lemon
  7. 1/2 tspsea salt
  8. 1firm ripe avocado
  9. 1 tspfresh lemon juice
  10. 1 tspchopped parsley
  11. 1ripe large peach
  12. 1Freshly baked pita bread

Steps

    Put black beans, garlic clove, tahini, olive oil, chili sauce, and the juice of 1 large lemon in a food processor and pulse until smooth. If the hummus is too thick, you can drizzle in some of the black bean liquid from the can.

    Season with 1/2 teaspoon sea salt.

  3. 3

    Transfer hummus to a bowl, and let chill.

  4. 4

    Meanwhile, dice avocado, and place into a small mixing bowl.

  5. 5

    Season with sea salt, 1 teaspoon fresh lemon juice, and chopped parsley.

  6. 6

    Dice peach, and add to avocado mixture; toss gently.

  7. 7

    To serve, place hummus into a serving dish, and top with marinated peaches and avocado.

  8. 8

    Serve with freshly baked pita chips.
