I'm currently doing Keto diet and so far it has been going great and I have posted few recipes inspired by it . This is one of them.
I was meant to make chicken fry 😅and slow cooked the chicken on the stove and discovered this amazing flavorful dish. Unfortunately, I don't have a crockpot, I made this on my regular stove and deep bottomed pot
If you are not used to Indian cooking, this recipe may seems big lengthy, but trust me it's totally worth it.
So far, this has been the best Indian chicken curry I have cooked < quoted by me and my husband as well>😆😆😆

Ingredients

  1. 1whole chicken, washed and cut into bite size pieces
  2. 1onions, chopped
  3. 2-3cardamoms
  4. 1-2 tbspghee
  5. Salt
  6. Few springs of curry leaves
  7. 1 tbsptamarind paste
  8. 1/4 tsptumeric powder
  9. For the masala:
  10. 1 tbspcoriander seeds/ powder
  11. 1 tbspcumin seeds/powder
  12. Few peppercorns
  13. 1/2 inchcinnamon
  14. 3cloves
  15. 1/4 tbspmustard seeds
  16. 1/2 tbspfennel seeds
  17. 3-4dried red chillies, 2 if u like mild
  18. 2onions chopped
  19. 1 tbspginger garlic paste
  20. 2 tbspghee

Cooking Instructions

  1. 1

    First dry roast the masala ingredients mentioned above except the onions and ginger garlic paste. Let it cool and keep aside

    Just heat some ghee in a pan, fry the onions til translucent, add some ginger garlic paste,cook till the raw smells is gone and set a side to cool

    Once cooked, grind the step 1 dry ingredients first and then add the fried onions with 1 tbsp of tamarind paste tumeric powder and little water and blend it to a smooth consistency.

    Heat a deep bottomed pan, add ghee, fry the cardamoms for 30 seconds, add the onions and the curry leaves and fry till onions are golden brown.

    Add the chicken pieces and prepared masala puree and mix well. Add water till the chicken looks immersed.

    Cover and cook on low heat for 30 to 40mins.

    Remove the lid and season with salt

    Cook for another 40 to 50mins depending on how much gravy u like. If u want less gravy, cook longer.

    Once u get desired consistency, turn off the stove and serve on a plate with cauliflower rice

    If you are not on keto diet, you can enjoy with Naan or any kind of flat bread. This is what my husband had

    The meat turned out soo juicy and tender. Had to take a picture while eating.
