Fried rice and jollof with fried plantain and fried chicken

Ingredients

4 servings
  1. Jollof rice(1 derica of rice
  2. Tomato paste
  3. Blended onions,tomatoes and ata rodo
  4. Groundout oil)
  5. Fried rice(1 derica of rice
  6. Spring onions
  7. Liver
  8. Sweet corn
  9. Green peas
  10. Green pepper
  11. Carrot)
  12. Thyme and curry for both
  13. Chicken stock
  14. cubesSeasoning
  15. Salt
  16. Onions
  17. Groundnut oil
  18. Plantain
  19. Chicken
  20. Kpanla fish

Cooking Instructions

    Boil your chicken and fish or any meat of your choice with your seasoning cubes,dice of onions,and salt with a bit of thyme and curry for added flavor

    Fry the meat and set aside and don't forget to take out the chicken stock

    (JOLLOF RICE)Parboil your rice and set aside

  4. 4

    Put a clean pot on fire..add groundnut after the pot is heated...put in your diced onions and mixed blended tomato and tomato paste and stir it for about 4 mins and make sure it doesn't get burnt during the process

    Add your chicken stock to it with adequate seasoning cubes,salt and a bit of water

    Add thyme and curry and stir then allow it to boil a bit then add your rice and stir then cover your pot

    Check it time to time and keep adding bits of water till it tender but don't make it too tender

    Stir the rice when it's ready so that the ingredients would come together then set aside

    (FRIED RICE)Wash your rice thoroughly with salt. Put it in a pot add adequate water,add curry with adequate seasoning cubes and salt and boil it till it's tender

    Dice your washed carrots,spring onions,boiled liver,green peas,green pepper

    Bring a clean pot,pour in groundnut oil and allow it to heat for a while..add your diced ingredients into it and stir..

    Add seasoning cubes,salt,curry and thyme and stir for like 4 minutes

    Bring another clean pot to fire and put in bit of the fried ingredients add bit of the cooked rice into it and stir for like 3 minutes bring it down and spread it on a tray for it to cool

    Repeat the process till all the ingredients and rice is finished

    Bring out a clean fry pan to fire add oil to it and allow it heat a bit..add your sliced plantain to it and get till golden brown

    Your dish is ready to be served...serve with a chill srink
