Soft delicious beans and plantains with fried spicy Titus fish

Ingredients

  1. 2 cupsbrown beans
  2. 1large ripe plantain
  3. 7 piecesatarodo (habenero pepper)
  4. 1large onion bulb
  5. 1 cupcrayfish
  6. 3 cubesMaggi naija pot
  7. 1/2 cuppalm oil
  8. 1 spoonsalt

Cooking Instructions

    Wash the beans thoroughly and parboil then set back on heat with enough water to cook it till very soft

  2. 2

    Meanwhile pound or blend the peppers, onions and half of the onion

  3. 3

    Wash and peel the plantain the cut into cubes

  4. 4

    Alice the remaining onion

  5. 5

    Once the beans is soft, add the blended pepper mix, onion, Maggi, and plantain. Allow to keep cooking for another 10mins

  6. 6

    Keep adding water if required and stir with a wooding spatula and lightly crush the beans in the process.

    Add salt and the palm oil. Cover to simmer on low heat.

  8. 8

    Taste for seasoning and adjust where necessary.

  9. 9

    Serve with fried spicy Titus fish from previous recipe.
