I am a pretty lousy cup cake maker but I promised my son a batch to take for his class. I was very impressed with how these ones turned out and a single batch served the whole class.

Ingredients

24 servings
  1. 100 gramsdark (semisweet) chocolate, chopped coarsely
  2. 1 cupwater
  3. 1 cupbrown sugar
  4. 125 gramsbutter
  5. 3eggs
  6. 2 cupplain flour
  7. 3tspn baking powder
  8. 1/4 cupcocoa powder

Cooking Instructions

    Preheat oven to 160°C Celsius.

    Combine chocolate and water in a small saucepan. Cook, stirring continually, over a medium-low heat until the chocolate is completely melted. Remove from heat and allow to cool as you perform the following two steps.

    Cream the butter and sugar in a large bowl. Add the eggs one at a time, beating well after each addition.

    Combine flour, baking powder and cocoa powder in a separate bowl and whisk together to combine.

    Alternating between the flour and chocolate mixtures, add these to the creamed butter/sugar. Stir gently after each addition until just combined.

    Spoon into lined muffin trays. Bake at 160°F for about 20 minutes (or until a toothpick comes out clean).
