A very tasty and refreshing recipe! It's a kind of tabbouleh (my way, with what I have at home) and it's very healthy! Perfect as a starter or side dish.

A very tasty and refreshing recipe! It's a kind of tabbouleh (my way, with what I have at home) and it's very healthy! Perfect as a starter or side dish.

I used these ingredients, but you can add as much as you like and use what you have at home raw.

In a pot, heat the vegetable broth or water with a vegetable bouillon cube (1 cup) over medium-high heat. When the cube dissolves and the water is almost boiling, add a pinch of salt, the couscous, and immediately remove from heat. Add a splash of olive oil and the juice of half a lemon. Stir well. Check if it's cooked; if it needs more cooking, add half a cup of water and heat until absorbed and perfectly cooked.

Finely chop all the vegetables. Add the dried spices and the finely chopped fresh herbs on top. Mix well.

Add the couscous on top and mix everything well. Add a splash of olive oil and taste to see if more lemon or spices are needed. Enjoy!
