Ingredients

  1. 1bunch(250 gm) Amaranthus /spinach
  2. 1/2coconut shredded
  3. 1 tspcumin seeds
  4. 1 tspmustard
  5. 2green chillies
  6. 1dry red chilli
  7. 1 tspchilli powder
  8. 1 tspurad dal
  9. 1small onion chopped
  10. 1shallot diced
  11. handfulcurry leaves
  12. to tasteSalt
  13. as requiredOil

Cooking Instructions

    Heat oil in a pan and splutter the mustard seeds and add the urud Dal, shallots, dry and green chillies with curry leaves.

    Once the shallots are brown. Add the washed and chopped amaranthus/spinach into it with the chopped onion. Add red chilli powder and salt and cover and cook for few minutes.

    After some time you see water coming out. Remove the lid and cook till the water dries.

    Meanwhile in a mixer grinder grind the shredded coconut and cumin seeds together

  5. 5

    Once the water is completely dried add the coconut mixture to the pan and stir together the amaranthus with coconut.

    After few minutes remove from flame and serve with hot rice.
