Ingredients

2 to 3 serve
  1. For Dhokla roll
  2. 1 cupchickpea flour
  3. 1/4 cupsemolina
  4. 1/4 cupall purpose flour
  5. 3/4 cupwhisk curd
  6. 2green chillies nicely chopped
  7. 1/2 inchginger nicely chopped
  8. 1/2 tspturmeric powder
  9. 2 tbsppowder sugar
  10. 1/4 tspcitric acid powder
  11. Pinchassafotida
  12. 1 tbspnicely chopped fresh corriender
  13. 1/2 tspsalt or as per taste
  14. 2 tbspoil
  15. 1/2 tspbaking soda
  16. 3/4 cupwater to prepare a better of dhokla
  17. For Shezwan stuffing,
  18. 1 cupboiled and nicely mashed potato
  19. 2 tbspspring onion white part nicely chopped
  20. 1+1/2 tsp garlic nicely chopped
  21. 3/4 tspginger nicely chopped
  22. 1 tspred chilli sauce
  23. 1 tsptomato ketchup
  24. 1 tspsugar
  25. 1/4 tspblack pepper powder
  26. Salt as per taste
  27. 1 tbspshezwan sauce
  28. As neededOil for cooking, greasing and tempting
  29. For Garlic mayo,
  30. 1/2 cupmayonnaise
  31. 2-3garlic nicely chopped
  32. 1/4 tspblack pepper powder
  33. 2 tbspmilk
  34. 1 tspcorn flour
  35. For tempting
  36. 1 tspcumin seeds
  37. 1 tspblack mustard seeds
  38. Pinchassafotida
  39. 3-4green chilli whole(slit)
  40. 3 tspsugar
  41. leavesSome curry
  42. 2-3 tbspWater
  43. 1 tbspchopped fresh corriender
  44. 1 tbspgrated coconut

Cooking Instructions

    Take whisked curd in a deep mixing bowl, Add besan, suji, maida and turmeric powder in curd and whisk well

    Now add chopped green chilli, ginger, chopped corriender,powdered sugar, hing, salt, oil and citric acid powder and mix, remember one thing no lumps make in this mixture add water gradually to prepare mixture of dhokla whisk well for 4 to 5 minutes continue and keep aside for 10 minutes

    Other side to make Shezwan stuffing, heat oil in a pan add garlic, ginger and onion one by one

  4. 4

    Now add chilli sauce, ketchup, sugar, shezwan sauce one by one and continue stir on high flame, now add salt and pepper and stir, finally add boiled and mashed potatoes and mix well and continue stir till masala incorporate well

    For Garlic Mayo, add garlic in milk and cook for a minute and close the lid and left to cool

    When milk cool discard garlic from milk add corn flour in milk and cook to slightly thick mixture, now add black pepper and mayonnaise in this and blend it to incorporate well and keep aside

    Now for Dhokla roll, prepare a deep pot with a stand and heat it 5 minutes on high flame,

    Other side take dhokla better finally add baking soda and mix well for a minute and transfer in already greased mold

    Now keep this mold in hot baking pot to bake for 20 to 25 minutes to bake on low flames, when slightly cool left out

    Spread garlic mayo on it

    Spread shezwan masala over the mayo sauce

    Rolled it with help of cling film and keep in fridge to set

  13. 13

    For Tempting, heat oil in fry pan, add cumin and mustard seeds, hing, curry leaves and green chilli, when sluptter add water and finally add sugar and left to melt sugar

  14. 14

    Now left out roll from fridge, pour the tempting over the top

  15. 15

    Now cut in slices, garnish with grated coconut and chopped corriender and serve.
