Cooking Instructions

Gather all the ingredients.

Separate the egg yolks from the whites. Add the sugar to the yolks and beat with an electric mixer until the mixture is almost white.

Beat the egg whites until stiff peaks form and set aside.

Gradually add the mascarpone to the egg yolk and sugar mixture. You can do this by hand with a wooden spoon, adding the mascarpone a little at a time to blend it well, or use an electric mixer for faster results. Mix thoroughly and make sure there are no lumps of mascarpone.

Finally, gently fold the beaten egg whites into the mixture a little at a time until you have a thick, smooth cream.

Brew the coffee and let it cool in a bowl. Take a baking dish and prepare the first layer of cookies. Dip the ladyfingers in the coffee, being careful not to soak them too much.

Spread a generous layer of cream over the cookies and sprinkle with chocolate chips.

Add another layer of ladyfingers and cream; dust with unsweetened cocoa powder. Refrigerate until ready to serve.

If you have extra cream, make individual servings and enjoy!

This time, I made it for my hubby's 40th birthday.The strawberry compote is just a mix of strawberries and sugar simmered together. You could also make this the traditional way and sprinkle cocoa powder on top. I topped it with strawberry compote based on my hubby's request.
