Easy & Low-Cal Okara Scones

I'm addicted to okara scones which are popular at the moment. I tried making them many times, and wondered if I could make them more easily with pancake mix. They are delicious, but in a very different way to the ones I usually make, so I uploaded this recipe. These are crispy and fluffy.

Pancake mix has the same number of calories as cake flour, around 370 kcal per 100 g. Because the pancake mix contains sugar (390 kcal per 100 g) and baking powder, you don't need to add any, which helps to keep the calorie count down. The texture will be different depending on what you use, but they are nice made with either cake flour or pancake mix. Recipe by Soraten mama

Ingredients

  1. 150 gramsFresh okara
  2. 150 gramsPancake mix
  3. 30 gramsMargarine
  4. 1optional Raisins, chocolate chips, or filling of your choice

Cooking Instructions

    Mix the three main ingredients together. I put them in a plastic bag and rub them together.

  2. 2

    When the ingredients have mixed, stretch the dough out to a thickness of 1.5 - 2 cm and stamp out shapes with a cutter. They don't expand that much when baking, so cut to them to the thickness you want them to be when cooked.

    Bake in the oven for 20 - 30 minutes at 170-180°C.
