Ingredients

2 hrs
5-6 servings
  1. Boiling water as required
  2. 1 tbsNamak (Salt)
  3. 1/2 tspZeera (Cumin seeds)
  4. 1Badi elaichi (Black cardamom)
  5. 1Darchini (Cinnamon stick)
  6. 1Badiyan ka phool (Star anise)
  7. 2Laung (Cloves)
  8. 1Tez patta (Bay leaf)
  9. 2-3Hari mirch (Green chillies)
  10. 1 tbsPodina (Mint leaves) chopped
  11. 1 tbsHara dhania (Fresh coriander) chopped
  12. 1 tbsLemon juice
  13. ½ kgChawal (Rice) (soaked 30 minutes)
  14. 1/4 CupGhee
  15. 2 mediumPyaz (Onion) sliced
  16. 1 tspZeera (Cumin seeds)
  17. 1Darchini (Cinnamon stick)
  18. 3-4Sabut kali mirch (Black peppercorns)
  19. 2Hari elaichi (Green cardamom)
  20. 1 mediumTamatar (Tomato) sliced
  21. 1 & ½ tbsAdrak lehsan paste (Ginger garlic paste)
  22. 1 tbsHari mirch (Green chilli) crushed
  23. ½ tspNamak (Salt) or to taste
  24. 1 & ½ tspLal mirch powder (Red chilli powder) or to taste
  25. 1 & ½ tspDhania powder (Coriander powder)
  26. 1/2 tspHaldi powder (Turmeric powder)
  27. 1/2 tspGaram masala powder
  28. 1/4 tspJaifil powder (Nutmeg powder)
  29. 1/4 tspJavitri powder (Mace powder)
  30. 1/2 CupDahi (Yogurt) whisked
  31. 1 & ½ tbsLemon juice
  32. 1 & ½ CupChana daal (Split bengal gram) (soaked & boiled with salt)
  33. ½ CupWater or as required
  34. 1-2 tbsHara dhania (Fresh coriander) chopped
  35. 1-2 tbsPodina (Mint leaves) chopped
  36. 3Hari mirch (Green chillies) slit
  37. handfulPyaz (Onion) fried
  38. 2-3 tbsPyaz (Onion) fried
  39. 1 tbsHara dhania (Fresh coriander) chopped
  40. 1 tbsPodina (Mint leaves) chopped
  41. 2Hari mirch (Green chilli) slit
  42. 1/2 tspZarda ka rang (Orange food color)
  43. 1 tspKewra water
  44. 2 tbsGhee

Steps

2 hrs
  1. 1

    In boiling water,add salt,cumin seeds,black cardamom,cinnamon stick,star anise,cloves,bay leaf,green chillies,mint leaves,fresh coriander,lemon juice & mix well,cover & cook on low flame for 2-3 minutes.

    Add soaked rice,mix well & boil on medium flame until 3/4th done then strain & set aside.

    In a pot,add ghee & let it melt.

  4. 4

    Add onion & fry on medium flame until light golden.

  5. 5

    Add cumin seeds,cinnamon stick,black peppercorns,green cardamom & mix well.

  6. 6

    Add tomato & mix well.

  7. 7

    Add ginger garlic paste,green chilli,salt,red chilli powder,coriander powder,turmeric powder,garam masala powder,nutmeg powder,mace powder,mix well & cook until tomatoes are soft (approx. 2-3 minutes).

    On low flame,add yogurt,lemon juice,mix well & cook on medium flame until oil separates (3-4 minutes).

    Add split bengal gram & mix well.

    Add water,fresh coriander,mint leaves and green chillies,cover & cook on low flame for 4-5 minutes

  11. 11

    Add fried onion,boiled rice,fried onion,fresh coriander,mint leaves,green chilli,orange food color,kewra water and ghee,cover & steam cook on low flame for 8-10 minutes.

    Garnish with fried onion & serve!
