Roast the poblano and jalapeño peppers directly over high heat on a gas stove, turning with tongs until the skins are charred, about 5 minutes. Place the peppers in a sealed plastic bag and let them steam for 5 minutes.

Remove the peppers from the bag. Using a paper towel, peel off the skins, cut off the stems, remove the veins and seeds. Slice into strips, then cut the strips in half. Slice the jalapeños into thin strips.

Preheat a medium saucepan over medium-high heat for 2 minutes. Add the oil and heat for 30 seconds. Reduce the heat to medium. Add the onion and sauté for 2 minutes. Add the garlic, pepper strips, black pepper, and salt. Sauté for 3 minutes.

Add the crema and corn, and cook for 2 minutes. Add the cheese, stir, and let it melt over low heat. Serve as a side dish or simply in corn tortillas! Enjoy!
