Dana Muthia Nu Shaak / Dumpling in mixed Bean Curry is a delicacy prepared in winters in Gujarati household. Here the dumplings are made with fresh fenugreek leaves and besan/ gram flour are cooked with the mixed beans along with fresh spices. The curry is delicious and full of flavor with all the fresh winter greens and spices used. It can be enjoyed on its own or can be served with roti, paratha, puri or rice. It is vegan.

Ingredients

25 minutes
3 serves
  • 1 Bowlfull of mixed beans.. Lima beans,green peas and fresh pigeon peas
  • 1Onion
  • 1Tomato
  • 2 tbspcrushed chilli garlic ginger
  • 3Brinjals
  • 2Potatoes
  • 3 tbspFresh Coriander
  • Salt to taste
  • 1 tbspcoriander powder
  • 1 tspchilli powder
  • 1 tspturmeric powder
  • Glasswater
  • For the Tadka
  • 2 tbspoil
  • 1/2 tspmustard seeds
  • 1 tspCumin and Carom Seeds
  • 1/2 tspAsafoetida
  • For Fenugreek Dumplings
  • 1 bowlBesan
  • 1 bowlfreshly chopped Fenugreek and Fresh coriander
  • Salt to taste
  • 1 tspchilli powder
  • 1/2 tspturmeric powder
  • 1 tbspcoriander powder
  • 1 tbspsesame seeds
  • 1 tbsplemon juice
  • Oil for frying dumplings

Steps

25 minutes
  1. 1

    Firstly mix all three green beans, wash and soak it in the water,
    Dice the Brinjals and potatoes,put it in the water
    Finley chop onion,tomato, chilli garlic and ginger
    Keep everything ready.

    Now make a Methi dumping..
    Wash the fenugreek and coriander leaves.
    Add besan in the bowl and add all the spices together with Fenugreek and coriander. Squeeze lemon juice.
    Now bind it and make a dough.then make small cylinder shape dumping.
    Heat the oil and fry all the dumplings till light golden in colour.
    Remove from the oil.
    Keep aside.

    Add oil in a pan,add mustard cumin and carrom seeds together with the asafoetida,let it crackle.
    Add crushed chilli garlic ginger, then onion and salt,saute till onion gets translucent.then add tomato,
    After that add Chilli turmeric and coriander powder together with little water,and sauté till tomato gets softer.

    Now add beans, Potato and brinjal.
    Mix with the gravy.
    Then add water and Fresh coriander.
    Cover the pan and let it cook till Beans get soft.

    Lastly, when subji gets done, add Methi dumping,mix gently with beans.
    Cook for another 2 minutes then switch off the heat.
    Let the subji sizzle for 2-3 minutes.

    Transfer the subji in serving bowl.
    Sprinkle coriander and serve hot.
    Enjoy it all alone or serve with roti/rice.
