Ingredients

30 minutes
4 servings
  • Pad Thai Sauce
  • 5 tbspspalm sugar
  • 6 tbspstamarind paste
  • 4 tbspsfish sauce
  • 6 tbspswater
  • Noodles, Meat, Vegetables, Aromatics
  • 4 ozmedium-sized rice noodles (soaked in room temperature water for 1 hour)
  • 1 cupshrimp seasoned with salt & pepper
  • 5 clovesminced garlic
  • 1 cupextra firm tofu (cut into strips)
  • 1minced shallot
  • 3 tbspssweet preserved daikon radish
  • 3 tbspsdried shrimp (chopped into powder)
  • 2eggs
  • 2 cupsbean sprouts
  • 1/2 cupchopped peanuts
  • 10 stalksgarlic chives
  • 1lime
  • 6 tbspsavocado oil

Steps

30 minutes
  1. 1

    Caramelize your palm sugar on the medium heat until golden. Then add the rest of your sauce ingredients on low heat. Combine, & remove from the stove.

    Cook your shrimp for 2 minutes on each side on medium-high heat

    Add some avocado oil to a wok, & pour in your garlic, shallots, radish, shrimp powder & tofu. Cook for 2 minutes

    Add your rice noodles & sauce to the wok. Stir until rice noodles are cooked with the sauce.

    Add your garlic chives, bean sprouts, & peanuts to the wok, & combine.

    Serve with the cooked shrimp, & garnish with lime, bean sprouts, garlic chives, crushed peanuts.
