I was looking for a relatively quick, little bit spicy, Asian noodle dish, sort of took a few recipes and came up with this. Most Dan Dan noodles have hard to find ingredients, so made some modifications, and it turned out pretty good.

Ingredients

  1. 1 lbground beef
  2. 2 tbspoil (I used peanut)
  3. 1/2medium onion, chopped
  4. 4 clovegarlic, minced
  5. 1 piece (2 inch)ginger, minced or grated
  6. 1 cupchicken stock
  7. 1 1/2 tbspsoy sauce
  8. 1 1/2 tbsprice wine vinegar
  9. 1 1/2 tbspsesame oil
  10. 2 tbsppeanut butter
  11. 1/2 lblong noodles
  12. Spicy
  13. 1each use only one of the spicy, these are some options, adjust to your liking
  14. 2 tbspgochujang (Korean chilli paste)
  15. 3 tbspSriracha sauce
  16. 2 tbspchilli paste, like samba oelek
  17. garnish
  18. 1each green onion, sliced
  19. 1/4 cuproasted peanuts, chopped
  20. 1 tbspcilantro, fresh

  1. 1

    In a medium size pan or skillet, heat the oil, medium-high heat, and when hot add the ground beef and cook until done, chopping into smaller pieces as you cook it.

    Remove cooked beef to a bowl with paper towels.

    Reduce heat to medium, add chopped onion and cook, stirring a little, until translucent. Scrap up any of the beef bits left in the pan, into the onions as it cooks

    Add the garlic and ginger, stir for about 2 minutes

    Add the stock (or water), soy sauce, vinegar, sesame oil, and peanut butter.

    Add your spicy ingredient of choice, but only one, I just listed a variety so you knew it wasn't all that difficult. My preference is the gochujang, but you can't always get that.

    Add your cooked beef back in, stir to mix well. Bring up to a simmer.

    Cook your noodles to al-dente, our just under done, not soft. I prefer a whole grain noodle, and something like spaghetti or linguini sized

    Cook your beef mixture until it is the thickness you desire. I like a gravy/sauce thickness myself.

  10. 10

    Drain your noodles when done, add a little butter or oil so they don't stick together

  11. 11

    Add the noodles to individual bowls, add the beef mixture on top, garnish and serve

My wife is disabled, she has M.S. And she finds it hard to cook from her wheelchair. I like a variety of foods, but hate tomatoes, so you don't see too many of my recipes with tomatoes on them. Also both of us have type II diabetes, so high carb and sweet is usually not on the menu either. We have one married daughter, and one that now lives in the Seattle area. We live in Texas, USA with our two dogs.Sorry I have not posted in awhile. Been taking chemo and radiation. and it has taken some out of me. Doctor says it seems to be working, so there is that.

I'm going to give this a shot. As a millennial living at home working and who loves to cook but doesn't have a ton of money this looks perfect. Excited to try this. I'll take pictures to show you how it all turned out
