Szechwan Noodles

Looking for something to use some pork in. Ran into a couple recipes, sort of combined and used ingredients I had. Turned out real nice. Could have been spicier for me, I didn't think as stated here, it was spicy at all. Pretty filling though. Not difficult, not very time consuming. If you don't have the Schezwan pepper corns, just ignore that part.
Also, other types of meat or tofu even could be used. Don't limit yourself!

Ingredients

  • Meat
  • 1/2 poundpork (small cube or ground)
  • 1 Tbs.Soy sauce
  • 1/2 tsp.Salt
  • 1 Tbs.Hot sauce
  • 1 Tbscorn starch
  • Sauce
  • 3 Tbs.Peanut butter or tahini
  • 5 clovesgarlic
  • 2 inchpiece fresh ginger
  • 2Tbl. Soy sauce
  • 4 stalksscallion (green onions)
  • 1 Tbs.Hot sauce
  • 1 cupchicken broth
  • Noodles
  • 12 Oz.Noodles (spaghetti I use)
  • 1 Tbs.Schezwan pepper corns
  • Garnish
  • Scallion, sesame seeds, chopped peanuts

Steps

  1. 1

    If using hunks of pork, cut into about half inch cubes.

    This is the hot sauce I was using this time, just for a reference.

    Mix all meat ingredients in a bowl, let sit 15-30 minutes.

    Cut scallions small.

  5. 5

    Cut garlic and ginger into small dice.

    Heat a dry wok/stir-fry/skillet on medium heat.

    Put Schezwan pepper corns in pan. Toast until dark brown and starts to smoke. 4-5 minutes.

    Remove, cool, grind, set aside.

    Time your noodles so they are done about the same time as the rest. About 15 minutes from this point. If they get done a couple minutes early, I add a little butter and stir it in to stop then from sticking to each other.

    Add a couple Tbs. Oil to pan. Let it heat up. Add pork.

    You want the pork to have a slightly crisp outside. Best way is to let it sit a minute, stir, sit, stir, repeat until done.

    Remove pork to a plate with paper towels to drain.

    You should have about a couple Tbs. of oil left.

    Add hot sauce, peanut butter (or tahini), soy sauce, stir until well mixed.

    Add scallions, garlic and ginger to hot oil. Stir for a minute.

    Add chicken broth, stir.

    Bring sauce to a boil, dinner until think, 3 or 4 minutes.

    Turn off heat.

    Place noodles in a serving bowl.

    Add pork to noodles.

    Put sauce over noodles.

    Sprinkle with ground Schezwan pepper corns

My wife is disabled, she has M.S. And she finds it hard to cook from her wheelchair. I like a variety of foods, but hate tomatoes, so you don't see too many of my recipes with tomatoes on them. Also both of us have type II diabetes, so high carb and sweet is usually not on the menu either. We have one married daughter, and one that now lives in the Seattle area. We live in Texas, USA with our two dogs.Sorry I have not posted in awhile. Been taking chemo and radiation. and it has taken some out of me. Doctor says it seems to be working, so there is that.
