Ingredients

  1. 2 cupsbasmati rice ( soaked and half cooked
  2. 2 cupshalf boiled vegiees of choice (beans carrot potato peas)
  3. 2big onions sliced and deep fired to golden brown
  4. 1/2 cupCurd
  5. 2Bay leaves
  6. 4Cloves
  7. 2Cinnamon stick
  8. 3Green elaichi
  9. 1Star anise
  10. 1 tspJeera
  11. 2 tbspGhee
  12. 1 tspKewra essence
  13. 1 tbspGinger garlic paste
  14. 1 tspHaldi
  15. 1 tbspRed chilli powder
  16. 1 cupDhaniya and pudina
  17. Cashews nuts hand ful
  18. 2 tbspKismiss
  19. 1 tspLemon juice
  20. to tasteSalt according
  21. 2Green chillies

Steps

  1. 1

    Take a bowl and mix the half boiled vegiees with curd dhaniya pudina haldi red chilli powder ginger garlic paste green chillies salt and half quantity of fried onions with 1/2 spoon ghee and lemon juice and keep aside for 15mins

  2. 2

    Take a pan add little ghee heat it add all the khada masalas like cloves cinnamon elaichi bay leaves and to it add the mixture of vegetables

  3. 3

    To this layer of rice add little dhaniya pudina green chilli and ghee fried onions cashews and kismiss

  4. 4

    On top of this add the half boiled rice and last finish layer with repeat dhaniya pudina green chillies fried onions cashews kismiss and ghee

  5. 5

    Before covering sprinkle a little kewra essence and cook it covered for 10 to 15 mins on low flame

  6. 6

    Serve hot with raita

  7. 7

    Recipe for raita take 1 cup curd and beat it well to it add a little milk mix and add chopped onions tomatoes salt jeera powder and black pepper with little fresh coriander leaves
