Ingredients

8-10 servings
  1. 3 Tablespoonsoil
  2. 1 poundturkey bacon diced
  3. 4 clovesgarlic -- chopped
  4. 2small onions -- diced 1/4 inch
  5. 1jalapeno,diced
  6. 1red bell pepper -- diced 1/4 inch
  7. 2large carrots -- diced 1/4 inch
  8. 2 stalkcelery -- diced 1/4 inch
  9. 4small potatoes -- diced 1/4 inch
  10. 1 1/2 teaspoonsalt
  11. 1/4 teaspoonthyme
  12. 1 teaspooncumin seed
  13. 1/2 teaspoonblack pepper
  14. 1/3 cupflour-(This will absorb the fat,add a couple of tablespoons if needed-it will thicken the soup as it simmers)
  15. 8 cupschicken stock
  16. 2tomatoes diced
  17. 1 poundcooked chicken, diced 1/2 inch (rotisserie chicken is real good)
  18. 1 canblack beans, rinsed and drained
  19. 4 tablespoonfresh cilantro finely chopped
  20. 1-2 ounceslime juice

Cooking Instructions

  1. 1

    In a large sauce pot add the oil and brown off the bacon then add the garlic, onions, jalapenos, red bell pepper,carrots,celery,potatoes and seasoning.

    Sauté over medium heat for 5 minutes and then dust with all of the flour. (Stir until incorporated)

    Add the chicken stock, diced tomatoes and chicken, black beans and simmer for 20 minutes.

    Adjust seasoning to taste then add the cilantro and lime juice to finish
