Easy Japchae

Japchae is a popular Korean dish made with dried sweet potato noodles called dangmyeon, vegetables, and meat (traditionally marinated beef in a savory sauce) stir-fried in a savory-sweet sauce. Everything is cooked in one bowl, and use a microwave to prepare this as a weeknight dish :-)
Easy Japchae
Japchae is a popular Korean dish made with dried sweet potato noodles called dangmyeon, vegetables, and meat (traditionally marinated beef in a savory sauce) stir-fried in a savory-sweet sauce. Everything is cooked in one bowl, and use a microwave to prepare this as a weeknight dish :-)

Place the bundle of noodles in a bowl.

Add warm water and soak 10-15 mins or until soft and pliable

Drain the water out, cut them into good bite sized lengths.

Whisk all the sauce ingredients in a microwave safe bowl.

Place the noodles over the dressing.

Place the carrots over the noodles.

Place the bean sprouts over them.

Loosely cover with plastic wrap over the bowl.

Cook in a microwave 600w, 5 minutes.

Take out from the microwave, unwrap the plastic wrap.

Toss well to evenly combine the dressing, then add spinach.

Loosely cover with plastic wrap, and cook for 600W, 3 mins.

Unwrap, and toss well to combine.

Add sesame seeds and toss once more.

Serve.

Use pantry friendly bean thread noodles over dangmyeon.
