Add all ingredients to a large dutch oven or soup pot. Bring to a boil.

Reduce heat, cover and simmer for about 30 to 40 minutes stirring occasionally or until peppers are tender.

I love stuffed peppers, my kids not so much lol. One day I was in a cafe where they serve a stuffed pepper soup it was amazing so I thought why can't I make this at home. I decided to take all of the components of my stuff peppers and turn it into a soup. This was so tasty and delicious my kids absolutely love it and they won't eat stuffed peppers by themselves but they will eat all of the soup. I don't have to season it too much because sweet Italian sausage has so much flavor but in a nutshell however you make your stuffed peppers season it the same way in the soup.stacy
