Seasame, miso and ginger chicken

This was inspired by my miso chicken recipe and what was in the fridge. An experiment that turned out really tasty. 😋
Cooking Instructions

Chop the asparagus, onion, pepper garlic and ginger
- 2
Mix the paste ingredients and stir in chopped chicken thigh fillets. (If it's too thick add a dash of water)

In a hot pan add seasame oil and add the garlic and ginger
- 4
Then add the chop veg and stir fry
- 5
After a minute add the chicken and cook until tender
- 6
Meanwhile chop the mushrooms
- 7
Stir in the mushrooms

Serve topped with pickled ginger

My Family's Miso Chicken Wings

Shiso Wrapped Pan Fried Chicken Breast With Miso and Ginger
I thought that this should work well in bentos, and tried it out.They really go well with rice or with drinks.If you are using this in a bento, marinate the chicken the night before in the refrigerator.Since the marinade has mirin in it, the chicken tends to burn easily. Pan fry over low heat to prevent that.The shiso leaves stick easily, so be careful not to cook the chicken for too long after wrapping the pieces with shiso leaves. This chili pepper miso sauce with vinegar is a variation of the Korean "Chogochujang" sauce, which is often used for sashimi and seasoning for other dishes.
