Pineapple Bread Made in a Bread Machine

I thought brioche and pineapple should go together, so I made this.

Please drain the syrup entirely.
As sliced bread, this paired well with ham.
You can use any type of sugar you like.
If you use a generous amount of sugar, it becomes snack bread that you can eat as-is.
I think adding raisins to the dough should work well too. Recipe by Ramirami

Ingredients

1 serving
  1. 250 gramsBread (strong) flour
  2. 100 gramsMilk
  3. 20to 30 grams Raw cane sugar
  4. 10 gramsSkim milk powder
  5. 75 gramsEgg
  6. 40 gramsButter
  7. 1 tspSalt
  8. 1heaping teaspoon Dry yeast
  9. 5 sliceSliced pineapple rings (canned)

Cooking Instructions

  1. 1

Put all the ingredients into a bread machine. I used small eggs so you can see 2 yolks. It's best to beat the eggs first and measure out 75 g.

  2. 2

Start the baking course! Let the bread machine do the heavy lifting. Make sure the pineapples are ready before it's time to mix in additional ingredients.

  3. 3

I use this canned pineapple. It has 10 sliced rings. We'll use half of these in this recipe.

  4. 4

    Drain off the syrup well.

  5. 5

Cut the pineapple up into easy to eat pieces. Add 2/3 of that when the 'mix in' beep sounds. Poke the rest of the pineapple into the dough when it's starting its final rise.

  6. 6

    Done.

  7. 7

Here's how it looks cut. The pineapple pieces have become pretty small (and kneaded into the dough).
