Ingredients

  1. 1 cupJowar /shorgum flour finely ground and seived
  2. 1/2 cupfine multigrain wheat flour
  3. to tasteSalt
  4. 1 Tbajwain/carom seeds
  5. Oil for deep frying
  6. 1ts asafoetida powder
  7. Water as needed for kneading
  8. 1 Tboil for kneading

Cooking Instructions

    Mix all the ingredients well in a mixing bowl except water

  2. 2

    Keep adding water slowly to knead a stiff dough

  3. 3

    Rest the dough covered for 15 minutes

  4. 4

    Take small portions of the dough and roll them into thin Long strips (roll in between your palms by greasing them with oil first)

    Then gently place the rolled strip on a flat surface or plate and roll into a concentric circle like shown in the image

    Prepare all the Nimkis similarly

    Meanwhile place a wok filled with enough oil for deep frying on the stove and let the oil heat on medium-Low heat

  8. 8

    After the Nimkis are done, check if the oil has heated enough and start to deep fry the Nimkis in batches

  9. 9

    Try not to overcrowd the wok and deep fry each till golden brown and crisp

  10. 10

    Strain excess oil from the fried Nimkis by placing them on a kitchen tissue

  11. 11

    Cool and Store airtight till consumption

  12. 12

    Enjoy the crispy Nimkis with your cuppa or even serve delight your guests with this homemade crispies!

    Tip: this is just one way of rolling/making Nimkis. You may choose to make them in any desired forms
