材料

4-5 servings
  1. spaghetti 400 g
  2. kosher salt for pasta water (1-1.5%)
  3. Prosciutto di Parma (minced) 4-5 slices (100 g)
  4. shallots (minced) 3 large (about 1 cup)
  5. garlic (minced) 3 cloves
  6. extra virgin olive oil 1/3 cup
  7. kosher salt 1/8 teaspoon
  8. freshly ground black pepper 1/4 teaspoon
  9. fresh rosemary (finely minced) 1/2 tablespoon
  10. fresh Italian parsley (minced + roughly minced) 2 tablespoons + 1/3 cup
  11. balsamic vinegar 2 tablespoons
  12. white wine 1 cup
  13. fish sauce 1 tablespoon
  14. mineral water as needed
  15. freshly grated Parmigiano Reggiano as desired

作り方

    Gather all the ingredients.

  2. 2

    Oil in a large sauté pan over medium heat, add shallots.

  3. 3

    Stir in salt and cook until translucent. Stir in garlic.

  4. 4

    Once garlic is fragrant, add ham and pepper and cook.

  5. 5

    Stir in balsamic/herbs, then add white wine and simmer.

  6. 6

    Bring water to a boil in a large pot. Add pasta and cook.

  7. 7

    Reduce pasta cooking time by 1min so we FINISH it in the PAN

  8. 8

    Add mineral water to adjust the sauce thickness as needed.

    Stir in fish sauce and taste. Add salt as needed.

  10. 10

    Transfer pasta, add parsley into the sauce and toss well.

  11. 11

    Toss pasta until sauce thickens and coat the pasta.

  12. 12

    Serve with grated parmesan over the pasta.

コツ・ポイント

Using good olive oil and balsamic vinegar is the key to having the BEST result!
