材料

  1. To make an authentic Italian soffritto:
  2. Onions, carrots and celery with a ratio of 2:1:1
  3. onions
  4. carrots
  5. celery
  6. kosher salt
  7. extra virgin olive oil
  8. Below is my regular "make ahead of time" soffritto recipe:
  9. yellow or sweet onion (finely minced) 2 large
  10. carrots (finely minced) 3-4 medium
  11. celery (finely minced) 3-4 stalks
  12. kosher salt 2 generous pinch
  13. extra virgin olive oil 1/3 cup + 2 tablespoons

    Gather all the ingredients.

    With a sharp knife, finely mince the onion/carrot/celery.

    OR use the pulse function of a food processor. Make sure →

    to pulse the vegetables individually.

    NOTE: Try to maintain a uniform size for the veggies.

    Oil in a large skillet over medium low heat.

  7. 7

    Add the vegetables and salt.

  8. 8

    Stir evenly while coating it with oil.

  9. 9

    Stir occasionally and cook until there is no excess moisture

    Heat to medium. Add oil and slowly fry and sizzle the oil

    Continue to cook and stir until golden. (total time =1 hour)

The ratio of the soffritto is flexible, so you can change the ratio based on what you want to make.
