材料

3-4 servings
  1. baby broccoli 1-2 bunches (300-400 g)
  2. kosher salt for blanching water
  3. shallot (thinly sliced) 1 medium
  4. boiled eggs (quarters) 2 larges
  5. ripe avocado (chopped) 1 large
  6. for the dressing:
  7. extra virgin olive oil 2 tablespoons
  8. mayonnaise 2 tablespoons
  9. raw apple cider vinegar 2 teaspoons
  10. country style dijon mustard 1 teaspoon
  11. honey 1 teaspoon
  12. fine sea salt 1/4 teaspoon
  13. freshly ground black pepper 1/8 teaspoon

    Cut the broccoli into bite sized pieces.

    Combine all the dressing ingredients in a large mixing bowl.

    Stir in broccoli and shallots, and then toss well.

    Add boiled eggs/avocados and toss gently to combine.

    Taste, and adjust with salt and pepper as needed.

    Let it sit in a fridge an hour before it's served.
