Ingredients

  1. 200 gmsPaneer cut into cubes
  2. 1small Onion cut into big chunks and separated
  3. Forpaneer marination-
  4. 1 tbspoil
  5. 1/2 tspturmeric powder
  6. 1 tspKashmiri red chilli powder
  7. 1/4 tspcrushed kasoori methi
  8. 2 tbspbeaten curd(thick)
  9. For gravy-
  10. 1 tbspoil
  11. 1medium Onion finely chopped or grated
  12. 1 tspCumin seeds
  13. 2Green cardamoms
  14. 1Bay leaf
  15. 1/2 tspCumin seeds
  16. 1 tspGinger Garlic paste
  17. 2medium Tomatoes pureed
  18. 1/2 tspTurmeric powder
  19. 1 teaspoonCoriander powder
  20. 1/2 tspCumin powder
  21. 1 teaspoonRed chilli powder
  22. to tasteSalt
  23. 1/2 tspGaram masala
  24. 1/2 cupWater
  25. 1tablespoon
  26. 2-3 tbspHeavy whipping cream or fresh cream or malai(optional)

Cooking Instructions

    Take a big bowl
    Add 1 tablespoon of oil
    Now add dry Masalas- turmeric powder, red Kashmiri chilli powder, black pepper powder, kasoori methi and salt to taste-to it and mix with a spoon.

    Add paneer cubes to this mix and stir gently so that paneer cubes get marinated. Keep aside for 5 minutes.

    Now add two tbsp beaten curd over the marinated paneer cubes and mix again gently.
    This will help paneer cubes to be coated nicely first with masala and then with curd.
    Keep it for 10 more minutes.

    Now take a non stick pan and add 1 tbsp of oil.
    Let it heat up and add marinated paneer cubes
    Let the paneer cook on low flame for 8-10 minutes
    It will start leaving oil slowly.

    Take out all the paneer cubes and masala separated, leaving the oozed out oil in the pan only. Keep this aside in a plate till used further.

    Now in the same pan add whole cumin seeds, bay leaves and cardamoms.
    Stir a bit and then add grated or very finely chopped onions.
    Keep sautéing
    Add ginger and garlic paste and keep stirring to let it cook.

    Then add pureed tomatoes.
    Add salt and spice powders. Mix well.
    Let it cook till all the moisture is evaporated and oil starts leaving the sides.
    Then add garam masala and mix well.

    Add cooked paneer and stir nicely. Add 1/2-1 cup of water and cover the pan.
    Once you see the gravy is boiling and paneer is getting cooked with the gravy add cubes of onion or onion bulbs (separated)

    Mix it very gently so paneer cubes do not break.

    At this time heavy cream can be added
    Mix it and let it simmer for 3-4 minutes.

    Turn off the stove, paneer do pyaza is ready to serve.
