Ingredients

  1. 2 CupsRice
  2. 1/2+ 1/8 Cup Bleached Palm Oil
  3. 2 CupsMeat Stock
  4. I Medium Onion Bulb
  5. 1 TablespoonLocust Beans
  6. Seasoning
  7. Salt to taste
  8. 1 1/2 Cupassorted meat (beef, shredded chicken and ponmo)
  9. 2medium size smoked fish (cleaned & deboned)
  10. HandfulBlanched African Spinach (alayahu)
  11. Pepper mix
  12. 2Tomatoes
  13. 3Bell Peppers
  14. 7Scotch Bonnet Pepper
  15. 1Big Onion

Cooking Instructions

  1. 1

    Place a pot on medium heat. Heat up bleached palm oil. Add onions and locust beans. Fry until fragrant. Add pepper mix (roughly blended) and fry while stirring occasionally.

    Fry for about 5 minutes until the pepper mix separates from the oil. Add cook beef and ponmo (cow skin). Add smoked fish and shredded chicken.

    Stir together and add meat stock. Add water enough to cook the rice till tender. Stir together and bring to a rolling boil. Add washed rice and stir.

    Check for salt and seasoning if necessary. Cover the pot with a lid and allow to cook until rice is tender. Once rice is tender add blanched African spinach or any vegetable of choice (pumpkin leaves, scent leaves).

    Turn off heat immediately and stir the vegetable in. Serve hot and Enjoy😎
