I grew up watching my mum prepare this native jollof rice delicacy which is also known as palm oil rice or enjoyment jollof ( because of the use of assorted proteins) . Its always a delight anyday anytime. A trial will convince you😉

I grew up watching my mum prepare this native jollof rice delicacy which is also known as palm oil rice or enjoyment jollof ( because of the use of assorted proteins) . Its always a delight anyday anytime. A trial will convince you😉
Cooking Instructions

Place a pot on medium heat. Heat up bleached palm oil. Add onions and locust beans. Fry until fragrant. Add pepper mix (roughly blended) and fry while stirring occasionally.

Fry for about 5 minutes until the pepper mix separates from the oil. Add cook beef and ponmo (cow skin). Add smoked fish and shredded chicken.

Stir together and add meat stock. Add water enough to cook the rice till tender. Stir together and bring to a rolling boil. Add washed rice and stir.

Check for salt and seasoning if necessary. Cover the pot with a lid and allow to cook until rice is tender. Once rice is tender add blanched African spinach or any vegetable of choice (pumpkin leaves, scent leaves).

Turn off heat immediately and stir the vegetable in. Serve hot and Enjoy😎
