Ingredients

  1. 3Shiitake mushrooms - thick ones are best
  2. 3Eggs
  3. 1/2 tspKatakuriko (potato starch)
  4. 1/4 tspSalt
  5. 1/4 tspDashi stock granules (Japanese instant stock)
  6. 3 TbspWater
  7. Sesame oil for stir-frying

Cooking Instructions

    Roughly chop the shiitake mushrooms.

    Dissolve the katakuriko in water.

  3. 3

    Beat the eggs.

  4. 4

    Combine the dissolved katakuriko from Step 2 and the eggs from Step 3. Add the dashi stock granules and salt.

  5. 5

    Heat the sesame oil in a pan and cook the shiitake mushrooms.

  6. 6

    When the mushrooms are cooked, add the egg mixture from Step 4 and plate when the eggs are still soft (just enough to cook through with the residual heat).

    Your fluffy eggs are done!
